Beef Roast With Vegetables Submitted By: Michael Collins
Hickory Mesquite Smoked Honey Dijon Beef Roast with Vegetables!

I use a Brinkmann Pro 2600 with a Charbroil Cast Iron Smoker filled with pre-soaked Hickory Mesquite chips.
Very Tasty. This recipe takes about a half hour to prep,,,and about 1.5 hours to cook. Great afternoon on the grill.
 
Prep work:
 
Place your roast in a large container and marinade (I use Honey Dijon Marinade for this one. The longer it marinades, the better. Marinate in fridge.)
 
Cut up approx 1 bag (small) of red potatoes, cut into chunks
2 onions,,,1 minced,,,,1 cut into chunks
1 bag of baby peeled carrots
3 tomatoes,,,cut into large chunks
4 or 5 celery stalks,,,cut into fine chunks
2 green peppers,,,cut into strips
1 red (sweet) pepper,,,cut into strips
2 cloves (I try not to overdo it here) of fresh minced garlic
 
Mix all vegetables in a large roasting pan.
Coat with Olive oil,,,salt,,,,and black pepper (Lots of pepper!)
Mix up,,,cover,,,and let soak on the counter for an hour or so (you may wish to leave on the side of the grill,,,,the neighbors will become interested. The more pungent it gets,,,the better it seems to taste when you're done!)
 
Start up your grill and bring up to about 275. When smoker box starts to smoke,,,,add your vegetables (in the roasting pan) to center of grill underneath warming rack.
 
Stir up your vegetables regularly, to avoid burning and to soften mixture up...
 
Add your marinated roast to warming rack,,,, over the roasting pan,,,so the juices drip into the roasting pan.
 
Rotate meat every 15-20 minutes,,,until outside is thoroughly grilled.
 
When vegetable medley is thoroughly cooked (it will become soft),,,,add the roast directly to the roasting pan.
I try to sear the meat at this point on one side of the pan, while moving all vegetables to the cooler side of the pan.
 
When satisfied the roast is done....DIG IN!
 
 
This recipe takes some time to make,,,but trust me,,,it is worth it in the long run....
 
I had neighbors hanging on the fence watching me,,,drooling. You could smell the hickory mesquite and olive oil vegetable mixture down the street!
