| My favorite comes out of Smoke and Spice by Jamison. It is
called Wild Willy's Number One-derful Rub. 3/4 Cup Paprika 1/4 cup ground black pepper 1/4 cup salt 1/4 cup sugar 2 Tablespoons chili powder 2 tablespoons garlic powder 2 tablespoons onion powder 2 teaspoosn cayenne Mix spices together in a bowl. Store in a cool dark pantry. I have used this run many times. This book is a great reference and one of the most comprehensive on smoking you will find. A great addition to any library. |
